I am just getting back into the swing of things after my trip to Australia & the Philippines (hopefully I get to post about it soon), so that means making sure I eat right after almost four weeks vacation from eating healthy!
Getting back from the airport, I came back to a completely empty refrigerator and just a couple of onions that thankfully lasted. With just a few ingredients from the freezer and some fresh basil from my mom's garden that she gifted to me, I was able to make a pretty healthy and amazing dish!
I initially prepared two versions using salmon and swai, so that's why you will see swai fillets in the step-by-step pictures below. So definitely try out this dish because it is super easy and flavorful PLUS you can use any fish you would like! Enjoy my Mediterranean Salmon!
Mediterranean Salmon
A Vintage Zest original
Ingredients
- Five 6-8 oz. Salmon fillets (or adjust according to your baking dish size)
- 1/2 onion, sliced
- 1/2 red onion, sliced
- 4 cups tomatoes, diced (I used frozen tomatoes from the huge crop grown by my mom)
- 8 garlic cloves, minced
- 1/2 cup fresh basil, chopped
- Black pepper
- Salt
Directions
1. Place 1/2 of the tomatoes at the bottom of the baking dish.
2. Add 1/2 of the onions, garlic, and basil. Season well with salt and pepper.
3. Layer the fish fillets in the baking dish. Here, I show two swai fillets, but I ended up using five salmon fillets in my other baking dish. And yes, I put them in while still frozen!
4. Cover with the remaining tomatoes, onions, garlic, and basil. Season well with salt and pepper.
5. You may optionally cover with foil as shown below. I chose not to, because I preferred a thicker sauce.
6. Bake at 400°F until the fish flakes easily with a fork, anywhere from 15 to 30 minutes. Check frequently!
My fillets took closer to 30 minutes because I began with them frozen. Keep this in mind!
And that's it! I served my salmon with a quinoa pilaf I had stashed in the freezer. Super easy and healthy for my first pre-grocery store meal!
